Artichoke and cannellini bean dip

Homemade crowd-pleasing dip beats store-bought anyday.
Ingredients:
  • 2 bagels, thinly sliced crossways
  • 60ml (1/4 cup) olive oil
  • 1 x 400g can cannellini beans, rinsed, drained
  • 1 x 170g jar marinated artichokes, drained
  • 2 green shallots, ends trimmed, coarsely chopped
  • Salt & freshly ground black pepper
Instructions:
  • Preheat the oven to 180°C. Arrange bagel slices in a single layer on 2 baking trays, then evenly drizzle 1 tablespoon of oil over them. Bake in the oven, swapping trays halfway through, until golden brown and crisp, for about 8 minutes. Remove from the oven.
  • Next, combine the cannellini beans, artichokes, shallot, and 1 tablespoon of the remaining oil in a food processor. Blend until nearly smooth, then season with salt and pepper to taste.
  • Transfer to a serving bowl and generously drizzle with the remaining oil. Enjoy with crispy bagel chips.
