Artichoke and chargrilled capsicum farfalle

Elevate pasta with a zesty sauce of marinated artichokes and charred bell peppers.
Ingredients:
  • 30g capers
  • 65g feta
  • 350g farfalle pasta
  • 2 cloves garlic, crushed
  • 1/4 tsp dried chilli flakes
  • 175g marinated artichokes
  • 220g capsicum
  • 10.60 gm lemon juice
  • 40.00 ml chopped parsley
  • Shaved parmesan cheese
Instructions:
  • Boil a large pot of salted water. Cook pasta as directed on the package. Drain and set aside.
  • In a skillet, warm olive oil over medium heat. Sauté garlic and chili for 30 seconds. Add artichokes, bell pepper, and capers, cooking for an additional minute until heated. Mix with hot pasta and serve.
  • Over the heat, combine feta, lemon juice, and parsley, tossing to mix well. Season to taste and divide the mixture among 4 plates. Serve immediately, topped with shaved parmesan.
