Char-grilled artichokes with caper and verjuice dressing

Elevate your meal with exquisite artichokes - a gourmet touch that's worth the wait.
Ingredients:
  • 1 lemon, juiced
  • 12 baby globe artichokes
  • 40.00 ml verjuice
  • 1 anchovy fillet, finely chopped
  • 20.00 ml baby salted capers, rinsed
  • 1 garlic clove, crushed
  • 5.90 gm Dijon mustard
  • 8 zucchini flowers
  • 100g prosciutto slices
Instructions:
  • Fill a large bowl with water and lemon juice. Trim the stalk off an artichoke, cut 1cm off the top, peel leaves to the pale yellow ones, cut in half lengthways, scoop out and discard the choke using a teaspoon. Place in the lemon water bath. Repeat with the rest of the artichokes.
  • Simmer the artichokes in a large saucepan until tender, approximately 10 minutes. Drain thoroughly.
  • Preheat a char-grill on high heat. In a small bowl, mix together verjuice, anchovy, capers, garlic, and mustard. Gradually add the oil while whisking until fully combined.
  • Grill the artichokes for 2 minutes per side until lightly charred, then transfer to a plate. Grill the zucchini flowers for 1 minute per side until lightly charred.
  • Assemble the artichokes, zucchini flowers, and prosciutto on a platter, then generously drizzle with dressing. Enjoy promptly.
