Tangy grape and pickled cucumber salad on romaine and arugula, an ideal fish dinner side.
Ingredients:
  • 1 cup water
  • 0.25 cup white vinegar
  • 3 tablespoons white sugar
  • 0.5 cup sliced seedless cucumber
  • 0.5 cup sliced red onion
  • 0.25 head romaine lettuce, chopped
  • 2 cups baby arugula
  • 3.5 tablespoons olive oil
  • 1.5 tablespoons balsamic vinegar
  • 0.5 cup red seedless grapes, halved
Instructions:
  • Combine water, white vinegar, and sugar in a bowl and whisk until the sugar dissolves.
  • Combine the cucumber and onion with the flavorful vinegar mixture, then chill in the fridge for 3 hours. Strain the vegetables before using.
  • Combine romaine lettuce and arugula in a large bowl, drizzle with olive oil and balsamic vinegar, then season with salt and black pepper.
  • Divide the salad evenly onto 2 plates and sprinkle the cucumber mixture and grapes on top before serving.
