Elevate your breakfast with peppery arugula breakfast sandwiches - perfect for on-the-go enjoyment!
Ingredients:
  • 3 cups arugula
  • 1/2 cup sliced almonds
  • 1 small clove garlic, peeled
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 2 patties turkey breakfast sausage
  • 3 eggs
  • Salt and pepper
  • 1 tablespoon Arugula Pesto
  • 2 slices provolone cheese
  • 2 whole wheat English muffins, split, toasted
Instructions:
  • Combine fresh arugula, crunchy almonds, pungent garlic, and savory Parmesan cheese in a food processor. Pulse until coarsely chopped. While the processor is running, gradually add fragrant olive oil until well blended. Transfer the flavorful pesto to a lidded container and refrigerate until needed.
  • Heat vegetable oil in an 8-inch nonstick skillet. Cook sausage patties until nicely browned and a meat thermometer inserted in the center reads 165°F. Drain cooked patties on paper towels.
  • Whisk eggs in a small bowl until well beaten. Add eggs to skillet over medium-low heat; season with salt and pepper. Stir and cook the eggs until nearly set. Mix in pesto and continue cooking until fully set.
  • Layer the provolone cheese on the bottom halves of English muffins, followed by the sausage patty and eggs. Finish by placing the top halves of the muffins on top. Serve while warm.
