Vibrant arugula pesto bursting with fresh arugula, garlic, olive oil, walnuts, and Parmesan.
Ingredients:
  • 2 cups of packed arugula leaves, stems removed
  • 1/2 cup of shelled walnuts
  • 1/2 cup fresh Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 6 garlic cloves, unpeeled
  • 1/2 garlic clove peeled and minced
  • 1/2 teaspoon salt
Instructions:
  • Caramelize the garlic: Cook 6 garlic cloves with their skins on in a skillet over medium-high heat until they develop a golden-brown color, around 10 minutes. Take the garlic out of the pan, let it cool, and peel off the skins.
  • Toast the nuts until lightly browned over medium heat on the stove or microwave on high for about 2 minutes until you achieve a roasted flavor.
  • For a faster preparation, mix arugula, salt, walnuts, roasted and raw garlic in a food processor. While pulsing, slowly add olive oil. Transfer mixture to a bowl and blend in Parmesan cheese. Alternatively, use a mortar to grind nuts, salt, and garlic. Add cheese and olive oil, grind until smooth. Finely chop arugula and incorporate into the mortar, grinding until smooth.
  • Adjust to taste: Personalize your pesto by testing and adding more of the ingredients as needed based on their freshness and flavor intensity. Enjoy with pasta, over freshly roasted potatoes, or as a flavorful pizza sauce.
