Tangy citrus vinaigrette dresses arugula salad with pear and red bell pepper.
Ingredients:
  • 0.33333334326744 cup freshly squeezed grapefruit juice
  • 0.33333334326744 cup freshly squeezed orange juice
  • 0.33333334326744 cup extra virgin olive oil
  • salt to taste
  • 6 ounces arugula - rinsed, dried and torn
  • 1 pear, cored and sliced
  • 1 red bell pepper, thinly sliced
Instructions:
  • Combine the grapefruit juice, orange juice, olive oil, and salt in a jar with a tight lid. Shake vigorously to blend.
  • In a large salad bowl, mix together fresh arugula, ripe pear slices, and crisp red pepper strips. Drizzle the flavorful dressing over the salad and gently toss to ensure every ingredient is coated perfectly. Enjoy immediately for the best taste!
