Creamy Asiago cheese dip with sun-dried tomatoes: a party favorite!
Ingredients:
  • 3 tablespoons chopped sun-dried tomatoes (not oil-packed)
  • 1 cup water
  • 1 package (3 oz) cream cheese, softened
  • 1/2 cup finely shredded Asiago cheese (2 oz)
  • 3/4 cup sour cream
  • 1/4 cup thinly sliced green onions (4 medium)
  • Assorted fresh vegetables or baguette slices, if desired
Instructions:
  • Combine juicy tomatoes with water in a small bowl and let sit for 30 minutes to enhance flavors. Then, drain thoroughly.
  • Combine tomatoes, cheeses, sour cream, and onions in a 3-cup microwavable ceramic fondue pot. Microwave on Medium for 3 minutes, stirring every minute until cheese is melted.
  • Set up the fondue pot on its stand with a candle underneath to keep the dip warm. Serve the dip alongside a variety of vegetables or slices of baguette.
