Loaded with savory mushrooms, broccoli, tomatoes, onion, and tangy Asiago cheese, this guilt-free strata is second-helping worthy.
Ingredients:
  • 1 large onion, chopped (1 cup)
  • 2 cups sliced fresh mushrooms (from 8-oz package)
  • 2 cups small fresh broccoli florets
  • 4 plum (Roma) tomatoes, chopped (2 cups)
  • 6 cups cubes (1 inch) 12-grain bread (7 slices)
  • 6 eggs
  • 1 1/2 cups fat-free (skim) milk
  • 3/4 teaspoon dried oregano leaves
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 cup shredded Asiago cheese (4 oz)
Instructions:
  • In a 12-inch skillet coated with cooking spray, sauté onion, mushrooms, and broccoli over medium-high heat for 5 to 6 minutes, stirring often until they are crisp-tender. Then, mix in the tomatoes and take the skillet off the heat.
  • Prepare the glass baking dish by spraying it with cooking spray. Spread the bread cubes in the baking dish and top with the vegetable mixture. In a medium bowl, whisk together eggs, milk, oregano, salt, black pepper, and red pepper. Pour this mixture over the vegetables, then sprinkle with cheese. Cover and refrigerate for at least 4 hours or overnight before baking.
  • Preheat oven to 350°F. Remove cover from baking dish. Bake for 45 to 50 minutes until the center is set (a bit of moisture in the center is normal and will evaporate as it sits). Rest for 5 minutes before cutting.
