Asian Asparagus Salad with Pecans

Chilled asparagus with zesty marinade, topped with crispy pecans and fresh green onions.
Ingredients:
  • 2 pounds fresh asparagus, trimmed
  • 0.25 cup rice vinegar
  • 0.25 cup soy sauce
  • 2 tablespoons vegetable oil
  • 2 teaspoons sugar
  • 0.5 cup chopped pecans
  • 1 tablespoon chopped green onions
Instructions:
  • Bring a medium saucepan of water to a boil, cook the asparagus until tender-crisp, drain, and briefly cool in cold water.
  • Combine rice vinegar, soy sauce, vegetable oil, sugar, salt, and pepper in a large resealable plastic bag. Add asparagus, seal the bag, and refrigerate for 24 hours to marinate. Before serving, sprinkle with pecans and green onion. Enjoy!
