Delicious crispy pork belly with a sweet Asian marinade by CKnight.
Ingredients:
  • 1kg Pork Belly Roast Boneless
  • 2 cloves garlic, crushed
  • 2 tsp finely grated fresh ginger
  • 2 tsp Chinese five spice
  • 65.63 gm light soy sauce
  • 67.50 gm hoi sin sauce
  • 62.50 ml dry sherry
  • 59.40 gm brown sugar
  • 2.30 gm olive oil
  • 3.60 gm sea salt flakes
Instructions:
  • Score the pork rind with a sharp knife at 1cm intervals. Place pork, rind side up, on a wire rack over the sink. Carefully pour boiling water over the pork rind. Pat dry with a paper towel and let cool for 10 minutes.
  • Combine garlic, ginger, five spice, soy sauce, hoisin sauce, sherry, and sugar in a large ceramic or glass dish. Add the pork belly, skin side up, being careful not to let the marinade touch the skin.
  • Chill uncovered for 3 hours or overnight to crisp up the pork skin.
  • 1. Preheat the oven to 180C and line a roasting pan with foil. 2. Place the pork in the roasting pan, reserving the marinade. 3. Roast for 45 minutes until tender. 4. Lightly brush the skin with oil and sprinkle with salt. 5. Place under a hot grill until the skin is crisp and golden.
  • Combine the leftover marinade with 1/4 cup of water in a small saucepan. Bring to a boil and let it simmer uncovered for 10 minutes. Serve the sauce with the pork roast.
