Pork belly with apple and pear relish recipe

Irresistible crispy pork belly with apple and pear relish - a heavenly delight!
Ingredients:
  • 800g Pork Belly Roast Boneless
  • 2.40 gm sea salt flakes
  • 1/2 tsp fennel seeds
  • 1/2 tsp cumin seeds
  • 2 brown onions, cut into wedges
  • 24.00 gm miso paste
  • 125ml chicken stock
  • 1 red apple
  • 1 green pear
  • 40.00 ml apple cider vinegar
  • 1.20 gm salt
  • 62.50 ml finely shredded mint
Instructions:
  • Preheat the oven to 150°C. Place the pork on a clean surface, pat the rind dry, score it with a knife, brush with oil, and sprinkle with salt flakes, fennel seeds, and cumin seeds.
  • Spread a layer of onion in the bottom of a roasting pan. Mix miso paste and stock with ¼ cup (60ml) water in a jug, then pour over the onions. Lay the pork with the rind facing up on top of the onion mixture. Cover the pan and roast for 2 hours until the pork is melt-in-your-mouth tender.
  • Preheat oven to 230°C. Roast uncovered pork for an additional 30 minutes or until the rind is crispy. Let it rest covered for 10 minutes before serving.
  • Core the apple, then slice it thinly and place in a bowl. Repeat the process with the pear. Add vinegar, sugar, salt, and mint to the fruits in the bowl and mix well.
  • Slice the pork generously and plate alongside the relish.
