Sticky pork belly with apple and watercress recipe

Indulge in irresistible sticky pork belly with apple and watercress before it disappears!
Ingredients:
  • 125ml apple juice
  • 200g quince paste, chopped
  • 1 tsp Chinese five spice
  • 60ml port
  • 60ml maple syrup
  • 23.40 gm Dijon mustard
  • 400g pkt Pork Belly Bites
  • 1 green apple, cored, finely chopped
  • 36.40 gm extra virgin olive oil
  • 1 lemon, juiced
  • 62.50 ml watercress sprigs
Instructions:
  • Preheat your oven to 200°C. Line a roasting pan with baking paper. In a saucepan, combine apple juice, quince paste, five-spice, port, maple syrup, and mustard. Heat over medium heat until simmering. Stir occasionally and cook for 5 minutes until the quince paste dissolves and the mixture thickens slightly. Allow it to cool slightly.
  • Pour half of the quince mixture into a heatproof bowl. Add the pork, making sure it's well coated. Let it sit for 15 minutes to enhance the flavors.
  • Position the pork with the skin facing up in the pan. Roast for 20 minutes, or until the pork is beautifully caramelized and fully cooked.
  • In a bowl, mix together the chopped apple, onion, oil, and lemon juice. Season to taste.
  • Place the pork and watercress beautifully on a serving platter. Generously drizzle with the remaining quince mixture before serving alongside the apple mixture.
