Whip up a delicious Asian pork belly stir-fry with fresh veggies and egg noodles in just 20 minutes using supermarket ingredients.
Ingredients:
  • 800g pork belly bites
  • 125ml (1/2 cup) maple syrup
  • 60ml (1/4 cup) Sweet Soy Sauce
  • 48.80 gm fish sauce
  • 40.00 ml rice wine vinegar
  • 1 long fresh red chilli, thinly sliced, deseeded (optional)
  • 400g fresh egg noodles
  • 180g pkt baby leaves and beetroot
  • 1 carrot, peeled, shredded
  • 125.00 ml torn fresh coriander sprigs
  • 62.50 ml fresh mint leaves
  • 40.00 ml salted roasted peanuts, coarsely chopped
Instructions:
  • To make the sticky pork, sear the pork in a large frying pan on high heat until well browned, stirring occasionally for about 7 minutes. Add maple syrup, sweet soy sauce, fish sauce, vinegar, and optional chili. Bring to a boil, then reduce heat to medium. Stir in 60ml (1/4 cup) water and simmer until the sauce thickens enough to coat the pork, stirring occasionally for about 2 minutes. Remove from heat.
  • Cook the noodles in a large saucepan of boiling water for 2 minutes or until just tender. Drain and rinse under cold water.
  • Prepare a colorful platter by mixing noodles, lettuce, carrot, coriander, and mint. Add a generous amount of pork on top. Serve with a side of peanuts and the extra pork.
