Quick caramel pork noodle stir-fry

30-minute sticky pork, noodle, and broccolini stir-fry - ideal for quick and tasty weeknight meals.
Ingredients:
  • 18.20 gm peanut oil
  • 500g pork sirloin steaks, diced into 2.5cm pieces
  • 59.40 gm brown sugar
  • 48.80 gm fish sauce
  • 21.00 gm soy sauce
  • 2cm piece fresh ginger, peeled, finely grated
  • 4 garlic cloves, sliced
  • 2 bunches broccolini, trimmed, halved
  • 8 small red chillies
  • 42.00 gm lime juice, plus wedges to serve
  • 63.75 gm salt-reduced chicken stock
  • 440g packet shelf-stable thin rice noodles
  • Fresh coriander sprigs, to serve
  • Fresh mint leaves, to serve
  • 1 carrot, cut into thin strips, to serve
  • Lime wedges, to serve
Instructions:
  • In a hot wok or large frying pan, cook pork in oil until browned all over for about 4 minutes. Add sugar, sauces, ginger, garlic, and 1/4 cup water. Cook until pork is just cooked through and sauce thickens slightly, about 5 minutes. Transfer pork to a bowl and cover to keep warm.
  • Toss broccolini, chili, lime juice, and stock into the wok. Stir-fry until broccolini is tender, about 2 minutes. Then, add noodles and stir-fry until heated through.
  • Arrange the pork, coriander, mint, and carrot over the noodles and serve with lime wedges.
