Sticky caramel pork sausage stir-fry

Quickie stir-fry: Sizzle pork sausages for an instant flavor boost. Time-saving genius!
Ingredients:
  • 500g thin pork sausages
  • 40.00 ml kecap manis
  • 48.80 gm oyster sauce
  • 32.00 gm brown sugar
  • 21.00 gm soy sauce
  • 12.20 gm fish sauce
  • 2 garlic cloves, crushed
  • 450g packet fresh hokkien noodles
  • 36.80 gm vegetable oil
  • 1 red onion, cut into wedges
  • 1 large red capsicum, cut into 2.5cm pieces
  • 1 bunch broccolini, cut into 5cm lengths
  • Thinly sliced green onion, to serve
Instructions:
  • Roll sausage mince into 3cm pieces after removing from casings.
  • Mix together the kecap manis, oyster sauce, sugar, soy sauce, fish sauce, and garlic in a small jug. Cook noodles according to package instructions.
  • In a hot wok or large frying pan, sizzle half of the oil. Cook red onion until slightly soft. Toss in capsicum and broccolini, stir-fry briefly. Plate and set aside.
  • Heat the remaining oil in a wok until sizzling. Stir-fry the sausage in two batches for 4 to 5 minutes until perfectly browned and cooked through. Return all the sausage to the wok and pour over the sauce. Remove from heat and toss the sausage in the sauce, letting it thicken and caramelize from the wok's residual heat.
  • Place the wok back on the heat and add the vegetables and noodles. Season with pepper and stir-fry until well combined. Serve the stir-fry topped with green onion.
