Try this unique Asian-inspired glazed ham for a fresh twist on a classic favorite.
Ingredients:
  • 1 small (6-7kg) leg of ham
  • About 36 whole cloves
  • 125ml soy sauce
  • 125ml maple syrup
  • 40.00 ml char siu (Chinese barbecue) sauce
  • 2-3 drops red liquid food colouring
  • 1 tsp five-spice powder
Instructions:
  • With a small sharp knife, cut around the end of the ham bone in a zigzag pattern. Gently lift the skin off in one piece, being careful to preserve the fat. Score the fat lightly in a diamond pattern and place a clove in the center of each diamond. Combine the remaining ingredients in a small bowl, brush over the ham, and refrigerate overnight. Remember to keep the reserved skin for later use.
  • 1. Preheat your oven to 160°C. 2. Set the ham on a rack over a roasting pan filled with 1 cup (250ml) hot water to prevent drippings from burning. 3. Brush the ham with the remaining soy mixture. 4. Bake for 40 minutes until golden and nicely glazed.
  • Transfer the remaining soy sauce mixture to a small saucepan and simmer over low heat for 2-3 minutes, stirring occasionally, until it thickens. Brush the glaze over the ham just before serving for a delicious finish.
