Elevate your Christmas ham with a vibrant and aromatic Asian-inspired glaze.
Ingredients:
  • 155g (3/4 cup, firmly packed) brown sugar
  • 170g (1/2 cup) plum jam
  • 21.00 gm fresh orange juice
  • 6 whole star anise
  • 7kg whole leg ham, on the bone whole cloves, to decorate
  • 250ml (1 cup) water
  • Star anise, extra, to decorate
Instructions:
  • Preheat the oven to 180°C. Position one oven shelf on the bottom rack and take out the others. Line a large roasting pan with non-stick baking paper.
  • In a small saucepan over low heat, combine sugar, jam, orange juice, and star anise. Cook and stir for 2-3 minutes until the sugar dissolves. Let it cool before using.
  • With a small sharp knife, delicately cut around the shank in a decorative zigzag pattern, approximately 10cm from the end. Gently glide the knife under the rind along the perimeter of the ham. Skillfully remove the entire rind in one piece by sliding your fingers between the rind and the fat.
  • Trim the excess fat from the ham, leaving a 1cm-thick layer. Score the fat in a diamond pattern with cloves in the center of each diamond, spaced 5cm apart and 5mm deep.
  • 1. Pour water into the pan. Place ham on a wire rack, wrap shank in foil, and pour half of the glaze over the ham. Brush to coat. 2. Bake for 30 minutes, then turn the pan and pour the remaining glaze over the ham. Bake for another 30 minutes.
  • Brush the ham with the glaze, reserving one star anise. Bake until golden, about 10 minutes. Decorate the ham with the reserved star anise and an extra one. Let the ham rest for 15 minutes before carving and transferring to a serving platter.
