Creamy Italian dessert meets spiced roasted plums for a fruity twist.
Ingredients:
  • 757.50 gm thickened cream
  • 780.00 gm buttermilk
  • 2 tsp vanilla bean paste
  • 141.90 gm caster sugar
  • 18.00 gm gelatine powder
  • 2 black plums, stones removed and discarded, cut into wedges
  • 2 red plums, stones removed and discarded, cut into wedges
  • 2 star anise
  • 1 cinnamon stick
  • 332.50 ml dry apera (sherry)
Instructions:
  • In a small saucepan over medium-low heat, combine cream, buttermilk, vanilla, and 1/2 cup sugar. Cook and stir for 4 to 5 minutes until almost simmering (avoid boiling). Transfer the mixture to a heatproof jug. Sprinkle gelatine over the mixture and whisk until dissolved. Let it cool for 20 minutes.
  • Prepare the muffin pan by lining 6 holes with paper towels. Place 6 serving glasses at an angle in the holes. Pour the panna cotta mixture into each glass, pouring it on one side so it sets diagonally. Chill in the refrigerator for 2 hours or until firm.
  • Preheat your oven to 200C/180C fan-forced. Combine plums, star anise, and cinnamon in a large roasting pan, then roast for 10 to 15 minutes until the fruit is tender and the sauce has thickened slightly. Cool before using.
  • Place plums on a large plate. Strain syrup through a fine sieve into a jug. Remove glasses from muffin pan and stand upright. Arrange plum wedges in each glass and drizzle with syrup. Serve immediately.
