Panna Cotta with Berry Sauce

Creamy vanilla panna cotta topped with mixed berry sauce - simple, quick, and delicious.
Ingredients:
  • 2 teaspoons plain gelatin
  • 0.25 cup cold water
  • 3 cups cream
  • 0.5 cup confectioners' sugar, sifted
  • 1 (1 1/2-inch-long) vanilla bean, split lengthwise
  • 1 (10 ounce) bag frozen mixed berries, thawed
  • 2 tablespoons superfine sugar
  • 2 tablespoons brandy
Instructions:
  • Soften gelatin in cold water in a small bowl. In a saucepan, combine cream, confectioners' sugar, and vanilla bean. Stir over medium heat until it simmers. Let it gently simmer for 5 minutes, then remove from heat and remove the vanilla bean before serving.
  • Combine gelatin and water with the hot cream mixture, stirring until gelatin dissolves. Pour the mixture into 6 lightly oiled 1/2-cup dariole molds (or other small cylindrical molds) and chill in the refrigerator overnight or for at least 8 hours.
  • In a bowl, gently mix together berries and sugar. Crush the berries with the back of a spoon and stir in brandy. Allow to sit for an hour until it thickens into a syrupy sauce.
  • Plate the panna cottas with a drizzle of berry sauce.
