White chocolate panna cotta with berries

Indulgent white chocolate panna cotta topped with a luscious berry compote.
Ingredients:
  • 275g white chocolate, chopped
  • 600mls pure cream
  • 141.90 gm caster sugar
  • 4.40 gm vanilla extract
  • 40.00 gm boiling water
  • 6.00 gm gelatine
  • 250g Greek Style Yoghurt
  • Almond wafers or biscotti, to serve
  • 450g frozen mixed berries
  • 62.50 gm boiling water
Instructions:
  • In a saucepan over low heat, melt chocolate with cream, sugar, and vanilla, stirring until smooth and heated through, about 5 minutes. Let it sit for 5 minutes before using.
  • 1. Pour boiling water into a heatproof jug and sprinkle gelatine over it. Use a fork to whisk and dissolve the gelatine, then allow it to cool slightly. 2. Add the gelatine mixture to the cream mixture and stir to combine. Let it sit for 15 minutes to cool. 3. Mix in the yogurt with the cream mixture and whisk until well combined. 4. Pour the mixture into eight 200ml glasses and cover loosely with plastic wrap. 5. Refrigerate for 6 hours or until set.
  • Prepare the compote by combining berries and sugar in a bowl. Mix well to coat the berries. Pour boiling water over the mixture and stir for 1 to 2 minutes until the sugar dissolves. Cover and chill in the refrigerator.
  • Garnish the panna cotta with compote and accompany it with almond wafers or biscotti for serving.
