White chocolate panna cotta with poached plums

Impress guests with silky Italian dessert: panna cotta!
Ingredients:
  • 180g white chocolate, chopped
  • 600ml thickened cream
  • 40.00 gm caster sugar
  • 1 vanilla bean, split, seeds scraped
  • 20.00 gm boiling water
  • 6.00 gm powdered gelatine
  • 1 orange
  • 6 blood or black diamond plums, halved, stoned
  • 125ml dessert wine
  • 125ml water
Instructions:
  • In a medium saucepan over low heat, gently meld together the chocolate, cream, sugar, and vanilla. Stir constantly for 5 minutes until the chocolate fully melts and the mixture becomes velvety and warmed. Let it sit for 5 minutes to enhance the flavors before using.
  • Pour the boiling water into a small jug and sprinkle the gelatine over it. Stir gently until the gelatine dissolves. Add the mixture to the cream and combine well. Remove and discard the vanilla bean.
  • Prepare six 1/2 cup (125ml) dariole moulds by greasing them. Divide the cream mixture evenly among the moulds. Cover loosely with plastic wrap and refrigerate for 4 hours or until set.
  • Zest the orange using a zester or a vegetable peeler. Use a small sharp knife to remove the white pith from the rind, then cut the rind into thin strips. Juice the orange and combine the plums, wine, water, orange rind, and juice in a saucepan over medium heat. Simmer until plums are tender and the syrup thickens. Transfer to a bowl, let cool, and chill in the fridge.
  • Gently unmold the panna cotta onto individual serving plates and accompany with poached plums and syrup for a delightful presentation.
