Elevate berry panna cotta with a touch of liqueur for a sophisticated flavor profile.
Ingredients:
  • 2 1/2 sheets (5g each) leaf gelatine
  • 600ml thin cream
  • 110g caster sugar
  • 120ml (7 tbsp) Drambuie
  • 350g mixed frozen berries
Instructions:
  • Soak gelatine in a bowl of cold water for 5 minutes.
  • In a saucepan, combine cream and 50g of sugar over gentle heat for 5 minutes, stirring until the sugar dissolves. Squeeze out the gelatine and stir it into the cream until fully dissolved. Mix in 4 tablespoons of Drambuie. Transfer to molds and chill in the fridge for 4 hours until set.
  • In a saucepan, combine the berries, remaining sugar, and Drambuie. Cook over low heat, stirring, until the sugar is dissolved, about 5 minutes. Remove from heat and let cool.
  • Carefully remove the panna cottas from their molds and generously drizzle the boozy berries on top.
