Indulge in a light and luscious dessert topped with fresh exotic fruits and drizzled with syrup.
Ingredients:
  • 185ml (3/4 cup) honey
  • 1 x 7cm cinnamon stick
  • 1 vanilla bean, split
  • 6 green cardamom pods, bruised
  • 2 whole star anise
  • 6 whole cloves
  • 60ml (1/4 cup) water
  • 600ml buttermilk
  • 60ml (1/4 cup) hot water
  • 12.00 gm gelatine powder
  • 1 lime
  • 40.00 gm caster sugar
  • 400g pawpaw, peeled, deseeded, thinly sliced
Instructions:
  • In a saucepan over medium-high heat, combine honey, cinnamon, vanilla bean, cardamom, star anise, and cloves. Bring to a boil, cook while stirring for 3-4 minutes until the mixture turns a deep golden color. Remove from heat, stir in water, and let it cool slightly.
  • Heat buttermilk in a saucepan over medium-low heat, stirring occasionally, until just warmed through for about 2-3 minutes.
  • Pour hot water into a heatproof jug and sprinkle in the gelatine. Whisk with a fork until the gelatine dissolves. Strain the honey mixture through a fine sieve into the buttermilk, then add the gelatine mixture and mix well. Prepare six 185ml (3/4-cup) metal dariole moulds on a baking tray. Evenly pour the buttermilk mixture into each mould. Cover and refrigerate for 4 hours, or until set.
  • Zest the lime and juice it. In a saucepan over medium heat, combine the lime zest, lime juice, and sugar. Stir for 3-5 minutes until the sugar dissolves and the syrup thickens. Let cool for 30 minutes.
  • In a bowl, gently mix pawpaw with syrup. Spoon panna cottas into serving bowls, then top with pawpaw mixture and a drizzle of syrup before serving.
