Sweet plum and star anise pork

Sticky-sweet Chinese dish enhanced with plum jam.
Ingredients:
  • 9.20 gm rice bran oil
  • 750g pork neck (scotch), cut into 3cm pieces
  • 2 garlic cloves, finely chopped
  • 2cm piece fresh ginger, finely grated
  • 62.50 ml shao hsing (Chinese cooking wine)
  • 247.50 gm plum jam
  • 382.50 gm salt reduced chicken style liquid stock
  • 2 star anise
  • 21.00 gm soy sauce
  • 40.00 ml fresh coriander sprigs
  • Steamed jasmine rice, to serve
  • Snow peas, to serve
Instructions:
  • In a heavy-based saucepan over medium-high heat, heat oil until shimmering. Brown pork in batches for about 5 minutes each. Transfer to a plate.
  • Sauté garlic and ginger in a pan until fragrant. Pour in wine and cook until reduced. Add back the pork along with jam, stock, and star anise. Simmer uncovered for 1.5 hours until sauce thickens and pork is tender. Remove star anise, then stir in soy sauce and season to taste.
  • Season the pork generously with aromatic coriander, then present it elegantly alongside fragrant jasmine rice and crisp snow peas.
