Delicious Asian duck salad with sweet plum and spicy chilli dressing.
Ingredients:
  • 6 plums, halved, stones removed
  • 1 cinnamon quill
  • 75g caster sugar
  • 1 garlic clove, finely chopped
  • 1 small red chilli, seeds removed, finely chopped
  • 51.60 gm Asian plum sauce
  • 60ml sunflower oil
  • 21.00 gm lime juice
  • 1 Chinese barbecued duck*
  • 750.00 ml mixed Asian herbs (such as Thai basil, mint and coriander)
  • 80g bean sprout
  • 8 spring onions, sliced on the diagonal
  • 40.00 ml chopped roasted peanuts
Instructions:
  • Preheat the oven to 180°C for the perfect cooking temperature.
  • In a baking dish, combine plums, star anise, cinnamon, caster sugar, and 1/4 cup (60ml) water. Cover with foil and roast for roughly 25 minutes until the plums begin to soften. Transfer 4 tablespoons of the cooking juices to a bowl. Allow the plums to cool, then peel.
  • Combine the garlic, chili, plum sauce, oil, and lime juice with the reserved cooking juices, then season to taste with salt and pepper.
  • **Enhanced Version:** Separate the succulent duck meat from the bones, then dice it into bite-sized pieces, ensuring no bones remain. Mix the tender duck meat with plums, fresh herbs, crisp bean sprouts, onions, and dressing in a bowl. Garnish the salad with a generous sprinkle of crunchy roasted peanuts before serving.
