Plum and custard strudel slice

Vintage recipe with a sweet twist that ages like fine wine.
Ingredients:
  • 55g caster sugar
  • 375ml milk
  • 300g plain flour
  • 100g brown sugar
  • 180g chilled butter, chopped
  • 40.00 gm iced water
  • 35g custard powder
  • 8 25g can plums, drained, halved, stones removed
  • 25g almond
  • 25g rolled oats
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C and prepare a 23cm square cake pan by greasing and lining it with baking paper, ensuring the paper overhangs the sides.
  • In a food processor, combine flour, brown sugar, and butter until mixture resembles fine breadcrumbs. Add water and process until just combined. Transfer to a floured surface and gently knead until smooth. Divide into 2 portions, wrap one in plastic wrap, and chill in the freezer.
  • Press the leftover dough into the pan's base and smooth the surface with the back of a spoon. Bake for 20 minutes or until it turns lightly golden. Take it out of the oven and let it cool slightly.
  • In a saucepan, whisk together custard powder and caster sugar. Slowly pour in milk while stirring. Cook on medium heat, stirring constantly with a wooden spoon, for 2-3 minutes until it boils and thickens. Remove from heat and pour over the prepared base. Allow to cool slightly before serving.
  • Evenly place the plums on top of the custard. Grate the chilled dough into a bowl. Combine with almonds and oats, then sprinkle over the plums. Bake for 35-40 minutes until golden brown. Let it cool in the pan. Dust with icing sugar, then cut into squares to serve.
