Plum and custard crumble bars recipe

Indulge in a cozy autumn treat with a delectable pear custard crumble, ideal for a relaxing Sunday tea time. Snuggle in with a warm pot of tea for the perfect experience.
Ingredients:
  • 25g walnut
  • 135g rolled oats
  • 150g plain flour
  • 110g brown sugar
  • 40g almond
  • 2.50 gm ground cinnamon
  • 125g butter, melted
  • 1 Free Range Egg yolk
  • 2 just-firm plums, stoned, cut into thin wedges
  • 30g custard powder
  • 40.00 gm caster sugar
  • 250ml milk
Instructions:
  • Preheat your oven to 180°C. Grease an 18cm x 28cm slice pan and line it with baking paper, leaving some overhang on the sides.
  • In a large bowl, mix together oats, flour, sugar, almonds, walnuts, and cinnamon. Add the butter and egg yolk, stirring until just combined. Spread half of the mixture evenly in the prepared pan using the back of a spoon, then bake for 15 minutes or until lightly golden.
  • In a medium saucepan, mix custard powder and sugar. Slowly whisk in the milk, stirring consistently. Heat over medium heat, stirring for 5 minutes until the custard boils and thickens. Allow it to cool slightly before using.
  • Pour the luscious custard over the buttery slice base, layering the sweet plums on top. Sprinkle the rest of the oat mixture all over for a delightful crunch. Bake until the top is a gorgeous golden brown, about 30 mins. Let it cool in the pan until it's just right, then cut into delicious pieces.
