Oriental coleslaw with snap peas, ramen noodles, and tangy dressing.
Ingredients:
  • 1 box (9 oz) frozen sugar snap peas
  • 1 bag (16 oz) coleslaw mix (shredded cabbage and carrots)
  • 1 cup thin bite-size red bell pepper strips
  • 1 cup shredded carrots (1 1/2 medium)
  • 1 package (3 oz) Oriental-flavor ramen noodle soup mix
  • 1 cup sweet-and-sour sauce
  • 2 tablespoons soy sauce
Instructions:
  • Prepare and cook the sugar snap peas according to the package instructions. Allow them to cool for 1 minute before proceeding.
  • In a large serving bowl, combine coleslaw mix, bell pepper, carrots, and discard the seasoning packet from the soup mix. Break noodles into bite-size pieces and add to the salad.
  • Toss sugar snap peas into salad. Combine sweet-and-sour sauce and soy sauce in a small bowl, then drizzle over the salad and gently mix. Refrigerate for at least 1 hour to soften noodles before serving.
