Asian Rice and Lentil Burgers

Delicious veggie burgers with brown rice, lentils, cashews, and stir-fry sauce. No beef needed!
Ingredients:
  • 1/2 cup uncooked brown rice
  • 1/4 cup dried lentils (2 oz), sorted, rinsed
  • 1 1/2 cups water
  • 2 tablespoons finely chopped cashews, slivered almonds or dry-roasted peanuts
  • 2 tablespoons Progresso™ plain dry bread crumbs
  • 2 tablespoons stir-fry sauce
  • 4 medium green onions, finely chopped (1/4 cup)
  • 1/4 cup fat-free egg product
  • 1 medium stalk celery, sliced (1/2 cup)
  • 1 medium carrot, peeled, sliced (1/2 cup)
  • 1/2 cup water
  • Hot cooked Chinese noodles or rice, if desired
Instructions:
  • In a 2-quart saucepan, bring rice, lentils, and 1 1/2 cups of water to a boil. Lower the heat, cover, and simmer for 30 to 40 minutes, stirring occasionally, until the lentils are tender and the water is absorbed. Allow to cool slightly before serving.
  • Gently mash the rice mixture in a saucepan using a fork. Add the rest of the burger ingredients and mix well. Form the mixture into 4 patties that are approximately 1/2 inch thick.
  • Lightly coat a 10-inch skillet with cooking spray. Cook the patties in the skillet for approximately 10 minutes, flipping only once, until they achieve a beautiful golden brown color. Transfer the patties from the skillet and keep them warm.
  • Mix sauce ingredients in the same skillet and bring to a boil. Reduce heat to medium, then add burgers. Cover and cook for 5 to 8 minutes until burgers are hot and vegetables are crisp-tender. Serve the sauce and burgers over Chinese noodles.
