Grilled meatball lettuce wraps with rice, veggies, and zesty Asian dipping sauce - a customizable family meal!
Ingredients:
  • 1 pound ground turkey
  • 1 tablespoon light soy sauce
  • 1 teaspoon minced garlic
  • 2 teaspoons minced fresh ginger root
  • 1 cup brown rice
  • 1 cup water
  • 16 large lettuce leaves
  • 1 cup shredded carrots
  • 1 cup green onions, thinly sliced
  • 1 cup sliced red bell pepper
  • 1 cup sliced radishes
  • 0.33333334326744 cup light soy sauce
  • 0.33333334326744 cup water
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons minced garlic
  • 1 tablespoon minced fresh ginger root
  • 1 teaspoon sugar
Instructions:
  • Combine ground turkey with savory soy sauce, aromatic garlic, and zesty ginger in a mixing bowl. Shape the mixture into 16 oval meatballs, then chill under cover in the refrigerator.
  • In a saucepan over medium heat, simmer rice with 2 cups of water until tender, about 20 minutes.
  • Preheat the grill or broiler. Assemble rice, lettuce, carrots, scallions, radishes, and red peppers on a platter or in separate bowls. Combine soy sauce, water, lemon juice, garlic, ginger, and sugar in a bowl to make dipping sauce, then distribute into 4 small bowls.
  • Skewer two meatballs onto each 10-inch skewer. Grill or broil for 10-12 minutes, turning occasionally until nicely browned. If broiling, line the pan with foil and drain fat after 6 minutes.
  • Take a lettuce leaf and fill it with rice, a meat roll, and vegetables. Roll it up and enjoy with dipping sauce or drizzle sauce on top.
