Spice up your lunch with delicious Asian-inspired chicken roll bundles.
Ingredients:
  • 1 barbecued chicken or roast chicken
  • 3 green onions, thinly sliced
  • 1 carrot, cut into small thin strips
  • 125.00 ml salted cashews, roughly chopped
  • Bread rolls, to serve
  • 2 tsp sesame oil
  • 42.00 gm light soy sauce
  • 20.00 ml rice vinegar or white wine vinegar
  • 5.00 gm caster sugar
Instructions:
  • Peel off chicken skin and discard. Remove meat from bones, discard bones, and shred chicken. Transfer shredded chicken to a bowl.
  • Prepare the dressing by combining all ingredients in a jug and whisking with a fork until smooth.
  • Drizzle the flavorful dressing onto the chicken, sprinkle with salt and pepper, and mix thoroughly. Store the chicken in one airtight container, and keep the onions, carrot, and nuts separately in their own airtight containers.
  • Before serving, combine the onions, carrot, and nuts with the chicken. Mix well. Serve the mixture in bread rolls or as a salad.
