Elevate salads with a flavorful, Asian-inspired chicken salad.
Ingredients:
  • 1L (4 cups) water
  • 1 brown onion, halved
  • 2 single chicken breast fillets
  • 1 carrot, peeled, cut into matchsticks
  • 150g snow peas, trimmed, thinly sliced
  • 1 red capsicum, deseeded, thinly sliced
  • 1/2 wombok (Chinese cabbage),hard core removed, finely shredded
  • 3 green shallots, ends trimmed, thinly sliced diagonally
  • 125.00 ml fresh coriander leaves
  • 42.00 gm fresh lime juice
  • 24.40 gm fish sauce
  • 1 fresh red chilli, deseeded, chopped
Instructions:
  • In a saucepan over medium heat, simmer chicken in water with onion. Cover and cook on low for 10 minutes until chicken is tender. Remove and discard onion before serving.
  • In a bowl, combine the carrot and snow peas. Pour boiling water over them and let sit for 1 minute until vibrant green and slightly crisp. Drain and rinse under cold water to stop the cooking process.
  • - Shred the chicken and place it in a bowl along with carrots, snow peas, bell peppers, Chinese cabbage, shallots, and coriander. - In a separate jar, mix lime juice, fish sauce, sugar, and chili to make the dressing. - Pour the dressing over the salad and mix well. - Serve the salad in individual bowls.
