Whip up a delicious pork belly stir-fry with fluffy jasmine rice in no time!
Ingredients:
  • 1kg Pork Belly Roast
  • 40.00 ml dry sherry
  • 5.00 gm cornflour
  • 2 garlic cloves, crushed
  • 20.00 ml ginger, finely grated
  • 150g snow peas, ends trimmed
  • 1 bunch pak choy, coarsely chopped
  • 2 spring onions, thinly sliced
  • 1 long red chilli, thinly sliced
  • Steamed jasmine rice, to serve
Instructions:
  • Dry the pork belly with a paper towel to ensure a perfect sear. Then, in a large heavy-based saucepan, cover the pork with cold water and bring it to a boil. Once boiling, lower the heat and simmer for 30 minutes. Move the pork to a plate and let it cool for 15 minutes. Proceed by slicing the pork into 1cm-thick strips and then cutting each strip into 2cm pieces.
  • In a small jug, mix together soy sauce, sherry, and cornflour.
  • In a wok over medium-high heat, warm 1 tablespoon of oil. Stir-fry the pork in batches for 5 minutes, or until golden and crisp. Transfer to a plate lined with paper towels.
  • In a hot pan, sauté garlic and ginger in remaining oil until fragrant. Toss in snow peas and stir-fry until bright green. Add pak choy, pork, and soy sauce. Cook until everything is just tender and the sauce boils. Remove from heat and enjoy.
  • Combine spring onion and chili with the dish, mix well, and serve alongside rice.
