Delicious as a standalone meal or paired with a fresh salad for a nutritious dish. Serve warm or chilled. Bon appétit!
Ingredients:
  • 20g butter
  • 2 onions, sliced
  • Salt and pepper
  • 2 sheets puff pastry
  • 1/2 can asparagus spears, drained
  • 150g feta
  • 120g tasty cheese, grated
  • Parmesan, grated (optional)
  • 4 eggs
  • 257.50 gm milk
  • 75.00 gm self-raising flour
  • Dried herbs, optional
Instructions:
  • Preheat the oven to 180C and warm up a heavy-based frying pan.
  • Caramelize onions with a touch of butter until golden brown; season with salt and pepper.
  • While the onions are caramelizing, thaw the puff pastry and fit it into a quiche or tart tray, trimming any extra. Cover the pastry with baking paper and add uncooked rice or beans on top to weigh it down. Bake in the oven until slightly golden brown. Once baked, let the pastry cool for 30 minutes, then remove the baking paper and rice/beans.
  • Arrange the onions, asparagus, feta, and tasty cheese in the chilled pastry crust. Add parmesan, if desired.
  • Mix eggs, milk, flour, salt, pepper, and dried herbs in a bowl. Pour over asparagus, ensuring it is well coated. Bake at 180C for 35-40 mins until cooked through.
  • After baking, let it rest for 10-15 minutes before slicing and serving.
