Asparagus & halloumi salad

Ingredients:
  • 450 g asparagus
  • 250 g halloumi
  • 1 bulb of fennel
  • 1 red onion
  • 2 tablespoons extra virgin olive oil
  • ½ an orange
Instructions:
  • Boil the asparagus in a large pot of salted water until tender, then cool in cold water. Heat a griddle pan over high heat. Slice and cook the halloumi until charred, flipping as needed. Slice the fennel and onion, add to a bowl with the asparagus and halloumi. Mix oil with orange zest and juice, season with salt and pepper. Drizzle dressing over ingredients, toss, and serve on a platter with warm halloumi.
