Delicious asparagus and ham quiche bites with a perfect balance of ingredients in a rich and moist egg base. Enjoy warm, at room temperature, or cold.
Ingredients:
  • 2 tablespoons melted butter
  • 1 bunch thin fresh asparagus
  • 2 ounces smoked ham, cut into 1/8-inch by 1/4-inch pieces
  • 1 cup grated Gruyere cheese
  • 7 large eggs
  • 1/3 cup cream or milk
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Cayenne pepper to taste
Instructions:
  • First, heat your oven to a toasty 400°F (200°C). Then, generously brush melted butter in 2 mini muffin tins and set them aside.
  • Trim the tough ends off the fresh asparagus spears. Boil a large pot of salted water and blanch the asparagus until bright green, about 1 to 2 minutes. Shock in cold water to halt cooking, then drain thoroughly.
  • Separate the asparagus tips and reserve. Slice the remaining spears into 1/4-inch pieces, yielding about 3/4 cup. Save any extra asparagus for later.
  • Layer each muffin cup with a generous amount of cut ham, followed by a heaping teaspoon of asparagus pieces, and finally sprinkle 1 teaspoon of grated cheese on top.
  • Thoroughly whisk together eggs, cream, salt, black pepper, and cayenne until well incorporated and smooth. Pour mixture into a pourable cup or container.
  • Spoon egg mixture to the brim of each mini muffin cup. Any remaining mixture will vary based on the fillings added. Place 1 or 2 asparagus tips on each cup, then sprinkle another teaspoon of cheese. Optionally, dust with cayenne for added flavor.
  • Bake in the oven until the egg bites are lightly golden brown on top and the egg is just set, about 18 minutes.
  • Allow the quiche bites to cool in the pans for 10 to 15 minutes. Use a thin knife to gently loosen the sides of each cup, then carefully lift out the quiche bites. Enjoy them warm, at room temperature, or chilled.
