Asparagus and peas with hazelnuts

Impress at parties with this elegant asparagus and green pea side dish.
Ingredients:
  • 55g hazelnuts
  • 2 bunches asparagus, trimmed
  • 200g snow peas, sliced lengthways
  • 300g pea
  • 60ml oil
  • 40.00 ml red wine vinegar
Instructions:
  • Preheat the oven to 180°C. Spread hazelnuts on a baking tray and roast for 8 minutes until toasted. Transfer the hazelnuts onto a clean tea towel, and rub to remove the skins. Coarsely chop the hazelnuts.
  • Blanch the asparagus, snow peas, and peas in a pot of salted boiling water until vibrant green and just tender. Drain thoroughly and place in a large heatproof bowl.
  • Drizzle oil, vinegar, and half of the hazelnuts over the salad. Season generously with salt and pepper. Toss gently to mix everything together. Plate the salad and top with the remaining hazelnuts for an extra crunch. Serve right away to enjoy at its best.
