Luscious fettuccine pasta with asparagus, bacon, and peas for a delightful main course.
Ingredients:
  • 5 slices bacon, cut into 1/2-inch pieces
  • 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
  • 0.5 pound fresh peas
  • 1 onion, chopped
  • 0.5 lemon, juiced
  • 1 pound fresh fettuccine pasta
  • 3 tablespoons heavy cream
  • 5 ounces shredded Italian three-cheese blend
Instructions:
  • In a large saucepan over medium-high heat, crisp up the bacon until evenly browned, approximately 10 minutes. Stir occasionally for even cooking. Remove bacon from the pan and drain excess grease, then place it on a paper towel-lined plate.
  • Bring a large pot of water to a boil, add asparagus and peas, cook for about 5 minutes until slightly softened but still bright green, then drain and set aside.
  • Saute the onion in the same pan as the bacon until translucent over medium heat, approximately 5 minutes. Add the asparagus, peas, and bacon pieces and mix well.
  • Drizzle the tangy lemon juice over the asparagus blend; season with a sprinkle of salt and freshly ground black pepper.
  • Boil a large pot of salted water, add fettuccine, and cook until tender, approximately 5 minutes. Drain thoroughly.
  • Combine the hot fettuccine with the asparagus mixture in the pan over medium-low heat, gently tossing to mix well.
  • Add the cream and simmer the mixture until heated through.
  • Sprinkle cheese blend over the mixture and let it sit until melted, approximately 5 minutes. Gently stir cheese into the fettuccine and vegetables before serving.
