Green Goddess Pasta Salad

TikTok-inspired green goddess pasta salad with creamy herb dressing and fresh green veggies. Bold, fresh, and delicious.
Ingredients:
  • For the dressing:
  • 2 lemons
  • 1/2 cup olive oil
  • 1 1/4 cups basil leaves, tightly packed
  • 1 cup baby spinach leaves, tightly packed
  • 2 cloves garlic
  • 1/4 cup raw cashews
  • 1/3 cup nutritional yeast or grated Parmesan cheese
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • For the pasta:
  • 1 tablespoon salt
  • 1 pound dry medium pasta shells
  • 1 1/2 cups frozen peas
  • 12 stalks thin green asparagus, tough stems trimmed and cut into 1/2-inch pieces
  • 1 fennel bulb, cored and very thinly sliced
  • 6 ounces drained, jarred pitted green olives, roughly chopped
  • 3 tablespoons finely chopped chives
  • 3 scallions, thinly sliced
Instructions:
  • Bring a large pot of salted water (about 3 quarts) to a boil over high heat.
  • While waiting, prepare the dressing: Grate the lemons to extract the zest and save for later use. Squeeze the lemons to get approximately 3 tablespoons of juice. Combine lemon juice, olive oil, basil, spinach, garlic, cashews, nutritional yeast, salt, and black pepper in a blender. Blend until creamy and smooth.
  • Add the pasta to boiling water. Two minutes before pasta is done cooking, add frozen peas and asparagus. Drain cooked pasta, peas, and asparagus in a colander in the sink. Rinse with cold water to halt cooking. Let drain completely.
  • Combine all ingredients in a large bowl: cooled pasta, peas, asparagus, fennel, olives, chives, scallions, and lemon zest. Add the dressing and mix well until everything is coated. Season with salt and black pepper to taste.
  • Chill the pasta salad before serving by refrigerating it for up to a day for optimum flavor. Store any leftovers in an airtight container in the fridge for up to 3 days.
