"Zesty horseradish cream cheese and asparagus rolled in tender roast beef for a flavorful appetizer."
Ingredients:
  • 25 thin asparagus spears, cut into 3-inch pieces
  • 0.75 cup cream cheese
  • 1.5 tablespoons prepared horseradish
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 pound thinly sliced deli roast beef
  • 25 whole chives
Instructions:
  • Bring a pot of water to a boil. Blanch asparagus in boiling water for 2 minutes, then shock in ice water to stop cooking.
  • In a bowl, combine cream cheese, horseradish, parsley, and chopped chives. Lay thinly sliced beef on a large sheet of waxed paper. Spread each roast beef slice with the cream cheese mixture. Place one asparagus spear on each slice so the tip overlaps the edge, then roll up the beef around the asparagus. Secure by tying a chive around the wrapped asparagus.
  • Place the rolls on a plate and seal with plastic wrap, then chill in the refrigerator for at least 30 minutes.
