"Vibrant Asian beef and asparagus noodle dish bursting with flavor!"
Ingredients:
  • 14 ounces rice noodles
  • 1/4 cup cider vinegar
  • 1 lime, zested and juiced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon chili powder
  • 4 cloves garlic minced
  • 2 teaspoon vegetable oil
  • 1/2 teaspoon Chinese five-spice powder
  • 1/2 teaspoon salt
  • 1 bunch asparagus, trimmed and cut into 3-inch pieces
  • 1 tablespoon minced fresh ginger
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup unsalted peanuts, coarsely chopped
Instructions:
  • In a large bowl, soak noodles in hot water until softened, which should take about 15 minutes.
  • In a small bowl, combine vinegar, lime zest, lime juice, brown sugar, and chili powder to make the sauce; set aside.
  • In a skillet, sizzle the beef with five-spice powder and salt until beautifully browned and crumbly, for about 5 minutes.
  • In a skillet, combine the asparagus, garlic, and ginger. Sauté until the asparagus turns bright green, for 1 to 2 minutes, stirring constantly.
  • After draining noodles, mix them with the beef mixture and sauce, tossing until coated. Top with peanuts and cilantro before serving.
