Quick and flavorful Thai beef noodle salad with basil and spicy dressing.
Ingredients:
  • 200g dried rice vermicelli noodles
  • 1 bunch asparagus, woody ends trimmed, cut into thirds diagonally
  • 600g beef scotch fillet steaks, excess fat trimmed
  • Olive oil spray
  • 2 tsp crushed chilli
  • 250.00 ml fresh basil leaves, torn
Instructions:
  • In a large heatproof bowl, pour boiling water over the noodles and asparagus. Let sit for 10 minutes until noodles are tender and asparagus is bright green and crisp-tender. Drain the mixture and roughly chop the noodles with kitchen scissors before returning them to the bowl.
  • Preheat a barbecue grill or chargrill on high while seasoning the beef with salt and pepper. Lightly spray with olive oil and grill for 4 minutes on each side for a medium cook, or to your desired doneness. Slice thinly against the grain before serving.
  • In a jug, mix the fish sauce, lime juice, sugar, and chili. Then add the beef, dressing, and basil to the noodles and toss until thoroughly combined. Serve and enjoy!
