Thai beef & rice noodle stir-fry with snow peas

In just 20 minutes, you can whip up a scrumptious and flavorful dish.
Ingredients:
  • 200g dried rice noodles
  • 350g lean beef stir-fry strips
  • 44.00 gm gluten-free sweet chilli sauce
  • 18.40 gm sunflower oil
  • 2 garlic cloves, thinly sliced
  • 200g snow peas, trimmed
  • 1 bunch spring onions, trimmed, thickly sliced
  • 125.00 ml Thai basil leaves (see note)
Instructions:
  • Prepare the noodles as directed on the packet. Ensure they are well drained and set them aside.
  • Next, combine the beef and 1 tablespoon of chili sauce in a bowl, tossing until evenly coated.
  • In a sizzling wok or large frypan, swiftly stir-fry beef, garlic, and ginger in two rounds until beef turns golden brown, about 1 minute. Set aside once done.
  • Clean the pan and place it back over medium-high heat. Add snow peas, spring onion, and 2 tablespoons of water, stir-fry for 1 minute until the peas are just tender, then add the beef mixture and any juices back to the pan.
  • Toss in noodles, fish sauce, lime juice, and the rest of the sweet chilli sauce. Stir-fry for another minute until warmed. Mix in basil leaves, then portion into bowls and enjoy.
