Ingredients:
  • 1 garlic clove, crushed
  • 1 tsp sesame oil
  • 400g lean beef fillet steak, thinly sliced diagonally
  • 450g fresh rice noodles (see note)
  • 1 bunch broccolini, trimmed, cut into bite-sized pieces (including stems)
  • 4 green onions, cut into 3cm lengths
  • 62.50 ml thai basil
  • 65.00 gm mild chilli sauce
  • 21.00 gm reduced-salt soy sauce
  • 150g beansprouts, trimmed
Instructions:
  • In a ceramic dish, mix garlic and sesame oil. Add beef and toss to coat. Cover and refrigerate for 10 minutes. Prepare noodles according to packet instructions.
  • Preheat a wok over high heat until smoking. Lightly spray with oil. Add beef in batches, stir-frying each for 1 minute until lightly browned. Transfer to a plate and continue with remaining beef and oil if needed.
  • Reapply oil to wok. Toss in broccolini and onions, stir-fry for 2 minutes. Mix in noodles, chili sauce, and soy sauce, stir-fry for another 2 minutes until noodles are heated through. Reintroduce beef to wok, stir-fry for 1 to 2 minutes until warm. Stir in beansprouts, combine well. Serve hot.
