Easy and quick asparagus dish with creamy mayo dressing and fresh basil. Ready in 20 minutes!
Ingredients:
  • 48 fresh asparagus spears (about 1 1/2 lb)
  • 1 cup mayonnaise or salad dressing
  • 2 tablespoons refrigerated basil pesto
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon finely chopped fresh basil leaves
  • 1 teaspoon fresh lemon juice
  • 1 clove garlic, finely chopped (1/2 teaspoon)
  • Fresh basil leaves, if desired
Instructions:
  • Trim the tough ends of the asparagus. Heat 1/2 inch water in a skillet until boiling. Add asparagus, reduce heat, cover, and simmer for 2 to 3 minutes until crisp-tender. Drain and cool in ice water, then refrigerate until serving.
  • Combine all remaining ingredients, excluding basil leaves, in a small bowl.
  • Transfer the creamy mayonnaise mixture to a chic serving bowl and artfully top it with fresh basil leaves. Enjoy alongside tender blanched asparagus.
