Chargrilled prosciutto asparagus with pesto dressing

Savory and crunchy side dish, can also be enjoyed as an enticing appetizer.
Ingredients:
  • 2 bunches asparagus, trimmed
  • 12 slices prosciutto
  • Olive oil cooking spray
  • 125.00 ml fresh basil leaves
  • 40.00 ml pine nuts, toasted
  • 40.00 ml finely grated parmesan
  • 1 small garlic clove, crushed
  • 56.88 gm extra virgin olive oil
  • 31.50 gm lemon juice
Instructions:
  • To create a delicious Basil Pesto dressing, simply combine basil, pine nuts, parmesan, and garlic in a small food processor. Blend until nearly smooth, scraping down the sides as needed. While the processor is running, slowly pour in the oil until well combined. Transfer the mixture to a bowl and mix in the lemon juice. Finally, season with salt and pepper to taste. Enjoy your flavorful dressing!
  • Wrap each asparagus spear with a slice of prosciutto. Preheat a barbecue chargrill over medium-high heat. Lightly spray asparagus with oil. Cook for 4 to 6 minutes, turning occasionally, until tender and charred.
  • Place the asparagus elegantly on a platter and generously drizzle with the flavorful dressing before presenting it to be served.
