Chargrilled asparagus and prosciutto pizza

Make gourmet pizzas at home faster than ordering take-out.
Ingredients:
  • 60ml olive oil
  • 3 garlic cloves, crushed
  • 1 bunch asparagus, ends trimmed
  • 6 individual pizza bases
  • 125g thinly sliced prosciutto
  • 125g semi-dried tomatoes
  • 100g goat's cheese
  • 50g baby rocket leaves
  • Balsamic vinegar, optional
  • Freshly ground pepper
Instructions:
  • 1. Mix the garlic with the oil. Heat a chargrill pan over high heat. Brush the asparagus with some of the garlic-infused oil. Grill for 2-3 minutes until tender. Let cool and then cut into 4cm pieces.
  • Preheat oven to a piping hot 230°C and slide in two trays.
  • Drizzle the leftover oil over the pizza bases. Layer with prosciutto, semi-dried tomatoes, and asparagus. Sprinkle goat's cheese on top.Transfer to the preheated trays and bake for 10-15 minutes until the base is crisp and cheese is melted.
  • Top pizzas with fresh, peppery arugula, then drizzle with the remaining olive oil, a splash of balsamic vinegar, and a sprinkle of freshly cracked black pepper before serving.
