Asparagus with chilli pangrattato

Blanch asparagus, top with herbed breadcrumbs for a fresh and nutritious side dish.
Ingredients:
  • 100g crusty bread
  • 1 long fresh red chilli, halved, deseeded, coarsely chopped
  • Olive oil spray
  • 3 bunches asparagus, woody ends trimmed
  • 40.00 ml chopped fresh continental parsley
  • Lemon wedges, to serve
Instructions:
  • Remove the bread crusts and discard, then coarsely chop the bread. Combine the bread and chili in a food processor and process until finely chopped.
  • Transfer the bread mixture to a non-stick frying pan set over low heat, then generously spray with olive oil. Cook and stir occasionally for 6-8 minutes until deliciously crisp and golden.
  • Bring a large frying pan of water to a boil. Add asparagus and cook for 2 minutes until vibrant green and crisp-tender. Rinse in cold water and drain.
  • Stir in the parsley with the bread mixture. Sprinkle the asparagus on a serving platter with the bread mixture. Serve with lemon wedges.
