Aussie rissoles

Prepare and freeze homemade lamb rissoles for quick weeknight dinners.
Ingredients:
  • 400g lamb mince
  • 125g can corn kernels, drained
  • 125g rindless bacon, finely chopped
  • 41.60 gm tomato sauce
  • 45.20 gm barbecue sauce
  • 40.00 ml finely chopped fresh chives
  • Potato wedges, to serve
  • Caramelised onion, to serve
  • Chopped chives, to serve
  • Tomato sauce, to serve
Instructions:
  • Mix mince, corn, bacon, tomato sauce, barbecue sauce, chives, salt, and pepper in a large bowl until well combined. Shape mixture into four 2cm-thick rissoles using your hands and place them on a plate.
  • Cook the rissoles in a generously oiled large frying pan over medium-high heat for 3 to 5 minutes per side, or until fully cooked.
  • Garnish with potato wedges, onion, chives, and tomato sauce before serving.
